Sorbu is a little truck where big flavors happen. We enjoy changing our menu every two weeks to keep ourselves and our costumers engaged in a seasonal experience. By doing so we are able to play and experiment with a variety of thoughtfully sourced ingredients and recipes. One of our main focus and interest is “la panificazione" (the process of making bread). We are commited to serve our sandwiches on bread baked daily in house. Our food is the result of a blend of our Italian family recipes, with some Tuscan traditional dishes like “il 5 e 5” (the panino with torta di ceci and grilled eggplant, a classic of the Costa Tirrenica and the main impulse behind this food truck project), local ingredients and a good dose of experimentation.

Slow roasted lamb shoulder w/ beet kraut, roasted carrot harrisa spread, potato, and ricotta on sourdough rye puff stuff. We work with colors.
Grilled lil gems w/ apple, chickpeas, all the herbs, creamy Gorgonzola dressing (sun shallot vinaigrette for vegan steez), and garlic bread crumbs. Add a fried egg if you like. They are from my chickens. Those ladies worked really hard to give us egg

Maybe you didn’t know you needed 5 pics of cake. But it’s that or Elon. Safe to say cake wins every damn time. Parsnip poppyseed lemon cake w/ whipped fig leaf cream, toasted hazelnut crumb, and some dried flowers from the garden.

It’s fish Friday! Coho salmon melt with pickled chilies and fontina on sourdough. I was told it slaps. Seems aggressive but I think that means it’s good.
